Making Spaghetti Amber Style

We start with the basic sauce. It's two cans of diced tomatoes and a can of Prego spaghetti sauce. I know that somewhere there's someones Italian grandma rolling in her grave, but I'm German and my ancestry doesn't care that I use premade sauce. :) The Prego has mushrooms in it, and I'd love to add more but Dad doesn't like 'fungus' so I suffer without huge chunks of yummy mushrooms in my sauce.
Sauce out of a can is boring. So we need one each of red, yellow and green peppers. An onion and a clove bulb of garlic.
You have to clean the seeds out of the peppers. The easiest way is to cut the plug out, kind of like carving the lid of a pumpkin to make a jack o'lantern. Then you can cut the pepper in half and clean out the seeds.
This is everything that goes into the sauce. Half of each of the cleaned peppers, half the onion and one of the little bit thingies off the garlic. Lobe? I don't know what it's called. The whole thing is a clove, but I don't know what that piece it breaks into is called. a clove of garlic. The whole thing is called the bulb and the little bit is the clove. Thanks sanil!
I'm just using the first pepper as an example. We have this nifty chopper thingy which makes dicing really fast and easy. Everything gets chopped into fine pieces.
Everything all chopped up and mixed into the sauce base.
We use ground chicken instead of burger whenever we can. I seasoned it with garlic powder, onion powder and Oregano. You just 'brown' in in the pan, which with chicken means that it turns that cooked chicken white color. Not brown brown like you get on beef.
Then I add the chicken to the sauce, cover, and leave to simmer for about two hours. The noodles and garlic bread don't take long at all. Just heat the oven for the bread and cook for 6 min. And the noodles just require about 6 min in boiling water.

    The individual piece of garlic is a clove. :D The whole thing is a bulb.

    I like seeing how you do things differently. :) I do peppers by cutting the sides off instead of doing the top first and then cleaning out the seeds. The benefit of that is that it is done faster (maybe not faster than the way you do it, but when I did it your way I always did it wrong and wound up with a lot of seeds left behind). The downside is that I usually miss some of the edible part of the pepper on the top and bottom and don't bother to cut up those little pieces then.

    I like that you use the Prego. :D It would be one thing if you just used that, 'cause like you say, boring. But you add to it and make it all yummy and fun, and that's neat. Nothing wrong with taking a shortcut and using already made sauce, the way I see it!

  2. Thanks! I knew it was wrong but I couldn't think of the right terms. I'm just making this cooking stuff up as I go.

    I don't know which way would be faster in cleaning out the seeds. Mine doesn't take very long at all, but I've never tried cutting the sides off first.

    I'm glad you agree with me on the shortcut! I know people who'd be horrified I don't make the stuff from scratch, but whatever. I don't have the time for that, and it still tastes yummy once I'm done with it.

    It is delicious. I really wish we had smell-o-vision or something. Once it gets cooking and you just wander around the house smelling the yumminess!

    He was going for 'terrified' in that picture! I only told him after the fact that I was going to post it to the blog. That's when he wanted a do-over so he could go fix his hair. He'd just come in from mowing and wasn't at his most fabulous. I denied him and went with the original pic. I think the hair adds something to it. :)

    Hey, I was trying to be logical. It looked lobe-y to me! :p I really should have just googled the name but whatever.

    We still have plenty of leftovers. Too bad you're all the way up there! Mmm... yum yum!

  6. Hah. He's such a girl. He actually spends like...20 mins every morning on his hair. Really! I'm a brush and go gal myself, and thank God I have hair that lets me get away with it. Prima Donna...*done in a singsong voice*
